Peanut Butter Chocolate Chip Cookies

What's the best way of finishing a whole tub of peanut butter? =)

Why not make cookies using peanut butter and might as well add some chocolate chips too?

That's what I did!

My Kraft Peanut Butter! I like mine crunchy....
Don't worry, the peanut butter doesn't expire until 2012! =)

Recipe (Adapted from Joy the Baker )

2 1/2 cups of plain flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
pinch of ground nutmeg
200g unsalted butter, at room temperature
1 cup crunchy peanut butter (smooth is fine too)
1 cup brown sugar ( I reduced it to 3/4 cup)
3/4 cup caster sugar ( I reduced it to 1/2 cup)
2 eggs
Dark chocolate chips

Preheat oven to 180 C. Line tray with baking paper.

Whisk together flour, baking soda, baking powder, salt and nutmeg.

Using a mixer, in a large bowl, beat the butter on medium speed until smooth and creamy. Add the peanut butter and beat for another minute. Add the sugars and beat for 3 more minutes. Add the eggs one a time, beating for about 1 minute after each addition.

On low speed, add the dry ingredients in batches (there will be some resistance to it) and mixing only until they just disappear. Finally, add the dark chocolate chips.

The cookie dough!
Take about a tablespoonful of dough and roll the dough into balls (about 2 cm in diameter). Placed them on the baking paper, leaving 2 inches apart.


Using a fork, press against each ball first in one direction and then in a perpendicular direction to achieve a flattened dough with crisscross indentations.


Bake the dough for 12 minutes or longer (at 180 C) depending on your oven. Let the cookies cool before transferring them.


The final product!
This recipe will make about 40 cookies (depending on how big you roll the dough). I stop baking after about 27 cookies and freezed the remaining dough. I used the freezed dough today and the cookies turned out the same (except that more choc chips were added to this batch)!

The verdict:
  • Good recipe from Joy the Baker
  • sweetness is just right (lucky that I reduced the amount of sugar)
  • Add more peanut butter for a stronger taste!
